Mimesi Restaurant is located inside the five-star Dimora Palanca Hotel in Florence, Italy. Dimora Palanca is a gorgeously restored villa that breathes elegance and luxury. To stick with the original lines of the old villa, this fine-dining restaurant is in the very same place the old kitchen stood, in the basement.
Concept
Mimesi is a fine dining restaurant led by well-versed head chef Giovanni Cerroni. This elegant reimagined restaurant sparks a feeling of home and comfort with built-in shelves, original tiled stove hood, dim lighting, and neutral tones. The sophisticated clean-lined decor sets the stage for the innovative food and wine to shine.

The Menu
A unique and one-of-a-kind menu brings a new experience to the dining scene in Florence. Mimesi’s menu is a set tasting menu created by the one and only Giovani Cerroni. Giovani uses innovation and skills to reimagine traditional dishes. Each dish is curated with fresh, seasonal, and sustainable ingredients. Along with a dazzling tasting menu, wine flights are an additional option and hand-chosen by Mimesi’s sommelier, Paolo Manoni.
Tasting Menu
Course 1
amuse bouche
A group of six small one-bite hors d’oeuvres preceded our dining experience perched on cold marble stones. A small qual egg soothed our tastebuds, while crispy puffed tapioca danced with tingling sensations and hints of chili notes. To end the opening show was a thin blue chocolate bonbon that unexpectedly bursted with ceviche.

Course 3
onion | pecorino cheese e beurre rouge
One of my favorite bites of the evening was the roasted onion quarters with a salty Italian cheese sauce instructed to mix with the red wine butter sauce. The mix of sauces encapsulated your taste buds while a punch of cooked sweet onion shined through for an all-encompassing bite.

smoked oysters | risotto | shiso
Head chef Giovani takes traditional Italian risotto to the next level by fusing it with a pronounced Japanese flavor of shiso. The fresh mint and basil flavors paired perfectly with the hand-picked French Viognier. Smoked oysters perched themselves on the field of green adding depth and texture.
Course 6
chicken | pepper | paired with rosso di montalcino 2019
One of the most loved courses is the chicken and pepper. This gorgeous dish comes out with chef Giovanni. He adds the final touch of a dark red reduction perfectly poured in the center. This is a stunning dish with vibrant fall colors popping on the large white plate. A 100% Sangiovese compliments the tangy peppers and juicy chicken.
